Farmer

Our Farmer style cheese has become a celebrated cheese among Club members. As Upper Bench's only semi-firm cheese, the Farmer lends itself well to aging and the addition of different flavors and spices. We let the rind develop naturally for this cheese, wash it in red wine for several weeks before aging it for 10 months.

This cheese is best served as is on a cheeseboard or crumbled on anything (beet salad is superb).

Enjoyed best at room temperature.
