Our Double Cream Brie is meticulously crafted in both ten-inch and three-inch wheels. We begin by cutting the curd generously large and delicately placing it into molds, followed by gentle dry salting before the young wheels are transferred to our aging room to develop their signature fine white bloomy rind. Our cheesemakers flip the cheese twice a week until it is perfectly ripe. As it ripens, this buttery Brie becomes increasingly creamy, revealing a rich, velvety texture that makes every bite a truly indulgent experience.
